Serves 4
Combine mayonnaise, sweet pickle relish and tomato sauce in a bowl and season with salt and pepper to taste. Add tabasco or other hot sauce to taste. Add prawns and mix.
Cut avocados in half and scoop about two tablespoons of flesh out from where the seed was – enough to make a nice sized bowl. Liberally squeeze lemon juice over the cut avocado, and season with salt and pepper to taste.
Fill with the prawn mixture and garnish with your herb of choice – we recommend finely chopped chives or coriander, or a freshly chopped red chilli.
Serve immediately and enjoy!
