Serves several adults as a snack (or one teen watching TV)

  • 3 perfectly ripe large avocados
  • Juice and zest from 1-2 limes
  • Small red chilli – deseeded and finely chopped
  • 1 large garlic clove – finely grated
  • Salt and freshly ground black pepper

Mash avocados to your preferred texture then add lime juice and zest, chilli, garlic and seasoning to taste. Eat immediately with corn chips, crudites, or on top of corn fritters.

The thing with guacamole is – everybody likes theirs a different way. The basic guac has avocados, an acid (lime or lemon juice) to keep the avocado from browning, and seasoning. If you don’t want garlic or chilli, don’t put it in. If you want to change things up, add more chilli, or even some diced tomato (seeds removed). Don’t be afraid to taste and refine to your palate.
