• 2 cups Sweetcorn – fresh, canned & drained, or frozen
  • ½ cup Red Onion – diced
  • ½ cup Red Pepper – diced
  • 1 medium green chilli – finely diced
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 cloves of Garlic – finely minced
  • 2 teaspoons Cumin
  • 1 teaspoon Salt
  • Pepper to taste
  • Juice of 1 Lime
  • ¼ cup Coriander (or Flat Leaf Parsley)
  • ½ cup yellow and red Cherry Tomatoes – halved
  • 2 ripe Avoexpress Avocados – cubed

This fantastically tasty and colourful salad can be served as a main meat-free meal, or as a side dish to fish, chicken, or a BBQ steak.  Great in tacos with some spicy pork too!

Method

  • Place all ingredients except the cherry tomatoes and avocado in a mixing bowl and stir to combine
  • Place in fridge for at least half an hour to allow flavours to develop
  • Remove from fridge when ready to serve and add cherry tomatoes and avocado; stir gently to combine
  • Enjoy!

Notes

  • When fresh sweetcorn is in season chargrill before removing the corn from the cob to add a smoky flavour
  • Allow frozen sweetcorn to completely defrost and then drain liquid before using
